Labneh cheesecake

Crust
  • 6 cracker sheets
  • 4 tablespoons unsalted butter, melted
  • Pinch of salt
Filling
  • 1 egg
  • 1 cup (225g) labneh
  • 1/3 cup sugar
  • ¼ cup sour cream
  • ¼ cup flour
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt
Topping
  • Fig Jam
preparation
  • Pre-heat the oven at 350 degree.
  • Add the graham crackers, the salt and the melted butter in a food processor and pulse. Press the mixture into the bottom of a pan. Set aside.
  • Add all the filling ingredients in a food processor and puree until completely smooth. Pour the mixture into the prepared crust.
  • Bake in the oven for 30 minutes. Allow to cool completely, or overnight, before removing from the pan.
  • Pour some fig jam on top of the cheesecake and serve.
